Grilled Seafood Ceviche
½ pound large peeled shrimp
½ pound bay scallops
½ pound baby octopus
Olive oil
3/4 cup fresh lime juice, plus several lime slices for garnish
1 medium white onion, finely chopped
1/2 cup chopped fresh cilantro, plus several sprigs for garnish
3/4 cup ketchup (or half each ketchup and chili sauce)
1 to 2 tablespoons bottled hot sauce
2-3 tablespoons olive oil (optional, but recommended to smooth out sharpness)
¾ cup diced peeled cucumber
¾ cup diced jicama
2 small ripe avocado, peeled, pitted and cubed
Salt, about 1/2 teaspoon
Marinate the seafood in olive oil and 2 cloves minced garlic for 30 minutes or longer. Grill the shrimp, scallops and octopus on a gas or charcoal grill. Do not overcook.
Cut the cooked shrimp and baby octopus into 1” pieces and quarter the cooked scallops. Place the seafood in a gallon size plastic storage bag. Toss with the lime juice and refrigerate to chill.
In a strainer, rinse the onion under cold water and then shake off the excess liquid.
Add the seafood to a ceramic or non-aluminum bowl, along with the cilantro, ketchup, hot sauce, olive oil, cucumber, jícama and avocado. Taste and season with salt. Cover and refrigerate, but if not serving immediately, prepare and add the avocado shortly before serving.
Spoon the ceviche into margarita glasses or small bowls; garnish with sprigs of cilantro and slices of lime. Serve with tostadas or tortilla chips.
Meat & Potatoes Burger

Yields 4 servings
2 large baking potatoes, peeled and cut into chunks
1 tablespoon butter
1/4 cup of heavy cream or half and half
Salt and pepper
2 pounds lean ground sirloin
2 tablespoons Worcestershire
1/4 cup flat-leaf parsley leaves, chopped
1/2 small onion, grated
4 poppy seed Kaiser rolls
A couple of tablespoons Dijon mustard
2 bunches watercress, cleaned and trimmed of thick stems
Place the potatoes in a sauce pot and cover by one inch with water. Place it over high heat and bring up to a bubble. Add some salt and boil the potatoes until tender, about 8-10 minutes. Drain the potatoes and return them to the pot and let them sit for a minute to dry out. Add the butter and the cream and a little more salt and some pepper. Using a fork or potato masher, mash them until desired consistency.
Once you have to potatoes going, put the burgers together: In a bowl, combine the sirloin, Worcestershire, parsley, grated onion, salt and pepper, and mix to combine. Score an X with the side of your hand to form 4 equal portions. Make the patties about one-inch thick and press a light indentation in the center of each one to prevent the burgers from bulging and promote more even cooking. Preheat a large skillet over medium-high heat with 2 turns of the pan of olive oil, about 2 tablespoons. Once you see the oil ripple, add the patties and cook on each side for 5-6 minutes, until they reach desired doneness. While the burgers are working, split the buns and toast them until golden in the toaster or under the broiler.
To build your burger, slather the buns with Dijon mustard and top the bottom buns with some watercress. On top of the greens, stack a burger patty then some of the mashed potatoes and the bun top.
Crab Cakes

Makes 5 crab cakes
1 pound jumbo lump crab meat, picked through
2 heaping tablespoons prepared mayonnaise
2 large eggs, lightly beaten
1/2 teaspoon Worcestershire sauce
1/2 heaping teaspoon cayenne pepper
1/4 teaspoon coarse salt
1/2 small onion, grated
1/2 teaspoon powdered mustard
17 saltine crackers, finely crushed
1/4 cup canola oil
Tartar Sauce (recipe follows)
Lemon wedges, for serving
In a large bowl, mix together crab meat, mayonnaise, eggs, Worcestershire sauce, cayenne pepper, onion, and mustard. Gently stir in crackers. Using a large ice cream scoop, scoop crab mixture into 8 portions onto a parchment-lined baking sheet. Press each scoop into a patty about 3/4 inch thick.
Heat oil in a large skillet over medium-high heat. Working in batches, add crab cakes and cook, turning once, until golden brown, 5 to 6 minutes per side. Transfer to a paper towel-lined plate to drain. Serve immediately with tartar sauce and lemon wedges.
Tartar Sauce
1/2 cup mayonnaise
1 tablespoon chopped cornichons
1 tablespoon grated onion
1 tablespoon capers, drained
2 tablespoons freshly squeezed lemon juice
Coarse salt
Freshly ground black pepper
In a small bowl whisk together mayonnaise, cornichons, shallots, capers, and lemon juice. Season with salt and pepper.
Potato Seafood Chowder
Serves 6
2 pounds littleneck clams, well scrubbed
2 1/2 cups water
2 tablespoons unsalted butter
1 medium yellow onion, cut into 1/2-inch dice
2 celery stalks, strings removed, sliced 1/8 inch thick
1 tablespoon all-purpose flour
1 1/2 pounds Yukon gold potatoes, peeled and cut into 3/4-inch dice
1 dried bay leaf
4 sprigs fresh thyme
1 pound firm white fish, such as cod or red snapper, cut into bite-size pieces
1/2 pound medium shrimp, peeled and deveined
1 1/2 cups half-and-half
Coarse salt and freshly ground pepper
Place clams and water in a medium saucepan over medium-high heat. Cover, and bring the water to a boil. Cook, stirring occasionally, until the clams have opened, 5 to 8 minutes. Remove clams, discard shells, and pass the broth through a cheesecloth-lined sieve, reserving the broth and clams separately. Set both aside.
Melt butter in a medium stockpot over medium heat. Add onion and celery, and cook, stirring frequently, until onion is translucent, about 4 minutes. Add flour, and cook, stirring, for 30 seconds. Add the reserved clam broth and the potatoes, bay leaf, and thyme. Cover, and bring to a boil. Reduce heat to medium-low, and simmer until the potatoes are tender, 10 to 12 minutes. Uncover, and add fish and shrimp. Cover, and simmer until cooked through, about 3 minutes. Add half-and-half and the reserved clams; season with salt and pepper. Heat through, but do not return to a boil.
Steak Fajitas
Yields 4 servings
8 flour tortillas, each 8 inches in diameter, heated
1 1/2 pounds beef flank steak, trimmed of fat
2 tablespoons extra-virgin olive oil
2 tablespoon ground cumin
1 tablespoon chipotle powder or chili powder
2 tablespoons vegetable oil, 2 turns around the pan
1/4 head Savoy cabbage, cored and shredded
2 red bell peppers, seeded and sliced
1 small red onion, sliced
Salt and freshly ground pepper, to taste
2 tablespoons hot sauce
2 limes, 1 juiced and 1 cut into wedges
1/2 pound smoked cheddar shredded
6 scallions, green part sliced on an angle
2 sliced avocados
1 cup sour cream
Preheat a grill pan or grill to medium-high. Preheat oven 200°F, wrap tortillas in a clean, wet, kitchen towel and place in oven to get warm. Drizzle steak with olive oil.
Season the steak with cumin, chipotle powder, salt and freshly ground black pepper. Place the seasoned flank steak on the grill or grill pan, cook until the meat is well-browned on one side, about 5 minutes. Turn and continue to cook until well-browned on the other side and medium-rare at the center, about 4 minutes more. Transfer the steak to a cutting board and let rest for several minutes.
While the steak is cooking, preheat a large, nonstick skillet over medium-high heat. Add vegetable oil and let the oil start to smoke. Add the cabbage, bell peppers and red onions, toss and cook them until the veggies soften and cabbage starts to wilt, about 8 minutes. Season the veggie mixture with salt, freshly ground pepper, hot sauce and juice of 1 lime. Remove from the heat and keep warm.
Thinly slice the steak across the grain and transfer to a warmed platter along with the spicy veggies. Serve with scallions, avocados, sour cream and lime wedges alongside as your toppers. Top the warm tortillas with a couple of slices of meat, spicy veggies, some smoked cheddar on top and whatever toppers you want!
Mini Meatball Sammies
Yield 8 servings
2 tablespoons extra-virgin olive oil
1/2 onion
1 small carrot
1 stalk celery
3 pinches fresh thyme
1 14-ounce can crushed tomatoes
1/3 pound ground sirloin
1/3 pound ground pork
1/3 pound ground veal
1 large egg
3 cloves garlic
1/2 cup bread crumbs
2 tablespoons milk
1/4 cup grated cheese
1/4 cup fresh flat-leaf parsley
2 pinches crushed red pepper flakes
1 cup chicken stock to thin sauce
4 hot dog buns
4 slices mozzarella cheese
Preheat oven to 400°F. Place a medium-size sauce pot over medium-high heat, add EVOO. Add the onion, carrot and celery, and cook for about 3-4 minutes. Add the thyme and cook for another minute. Add the crushed tomatoes, turn heat down to low and cook for 10-15 minutes.
In a medium-size mixing bowl, combine meats with egg, garlic, bread crumbs, milk, grated cheese, parsley, red pepper flakes and season with salt and pepper. Form into mini meatballs. Add the meatballs to the sauce and cook for 15-20 minutes or until cooked through. Thin the sauce with chicken stock as the sauce thickens, or as needed.
Cut about 1/4 inch off of each end of the bun and then cut in half so you 2 mini buns. Place a couple strips of cheese on each mini bun and then place a couple meatballs on that. Top with a little sauce and enjoy!
Daube de Boeuf Provencal
Serves 6
4 fresh thyme
1 dried bay leaf
3 whole cloves
1 teaspoon whole black peppercorns
3 orange zest, (2 to 3 inches each), plus 2 tablespoons fresh orange juice
1 medium onion, coarsely chopped (about 1 cup)
2 garlic cloves, crushed with the flat side of a large knife
1 celery stalk, cut crosswise into 1/2-inch pieces (about 1/2 cup)
3 medium carrots, cut crosswise into 1-inch pieces (about 1 1/4 cups)
1 bottle (750 mL) rich red wine, such as Syrah or Shiraz
4 pounds beef chuck roast, cut into 1 1/2-inch cubes
1/4 cup extra-virgin olive oil
1 tablespoon tomato paste
1/2 cup homemade or low-sodium store-bought beef or chicken stock
1/2 cup nicoise olives, pitted and rinsed

Make a bouquet garni: Put thyme, bay leaf, cloves, peppercorns, and zest on a piece of cheesecloth; tie into a bundle. Combine onion, garlic, celery, carrots, bouquet garni, and wine in a large non-reactive bowl. Add beef, and toss to coat. Cover, and marinate in the refrigerator 12 to 24 hours, stirring occasionally.
Preheat oven to 300 degrees;. Remove beef from wine mixture; pat dry with paper towels. Set aside. Transfer wine mixture to a heavy pot; bring to a boil. Reduce heat; simmer 5 minutes. Set aside. Heat 2 tablespoons oil in a large skillet over medium-high heat. Cook half of the beef, turning, until deeply browned, about 2 minutes per side. Transfer to a plate. Repeat with remaining oil and beef. Stir tomato paste into stock; add to the skillet, scraping up browned bits with a wooden spoon. Add to wine mixture. Stir in olives and beef. Season with salt. Bring to a simmer over medium-high heat.
Cover daube; transfer to oven. Cook 2 hours. Reduce oven temperature to 275 degrees; if daube starts to boil. After 2 hours, stir in orange juice. Cook until beef is very tender, about 30 minutes more.
Salmon Nicoise Salad
Serves 4
Coarse salt and freshly ground pepper
12 ounces (4 to 5) red new potatoes
8 ounces green beans, trimmed
2 (8-ounce) skinless salmon fillets
3 large Hard-Cooked Eggs
4 to 12 large leaves Boston or bib lettuce
4 plum tomatoes, cut into quarters
1 medium red onion, thinly sliced
One 2.8-ounce jar or tin anchovy fillets, drained (optional)
1/4 cup Kalamata (or black) olives
Dijon Vinaigrette (recipe follows)
In a 5-quart pot, bring 1/2 inch water to a boil; add salt and potatoes. Cover; cook, turning occasionally, until tender, 14 to 16 minutes. With a slotted spoon, transfer potatoes to a bowl. Set aside to cool. Add green beans to the pot of boiling water. Cover; cook, stirring occasionally, until tender, 4 to 6 minutes. Remove with a slotted spoon. Rinse under cool water, and set aside. Fill a deep skillet with 1/4 inch water, season salmon on both sides with salt and pepper; place in the skillet. Bring water to a gentle simmer; cover, and cook until the salmon is opaque throughout, 10 to 12 minutes. Transfer to a plate; flake with a fork, and let cool.
While salmon is cooking, quarter potatoes. Peel and quarter eggs, using a wet pairing knife to make neat cuts. Form a cup using 1 to 3 lettuce leaves in each of 4 bowls. Arrange salmon, green beans, potatoes, eggs, tomatoes, onion, anchovies, if desired, and olives in lettuce cups. Serve with the vinaigrette.
Dijon Vinaigrette
Serves 4
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
Coarse salt and fresh ground pepper
1/4 cup olive oil
In a medium bowl, whisk the juice, mustard, 1/2 teaspoon salt, and a pinch of pepper until combined. Whisking constantly, add the olive oil in a steady stream; whisk until thickened and creamy. Alternatively shake all ingredients in a small jar.
Chicken and Vegetable Casserole
Yields 4 servings
1 pound egg noodles
Salt
2 tablespoons extra-virgin olive oil
4 boneless, skinless chicken breasts, chopped into bite-size pieces
2 cups shredded or grated carrots
1 large onion, chopped
2 ribs celery, chopped
3 cloves garlic, finely grated or chopped
1 fresh or dry bay leaf
Freshly ground black pepper
2 tablespoons butter
2 tablespoons flour
1/2 cup white wine
2 cups chicken stock
2 cups milk
1 10-ounce box frozen peas
20 leaves basil, roughly chopped or torn
1/4 cup flat-leaf parsley leaves, roughly chopped
1 cup plain bread crumbs
1/2 cup shredded Italian 3-cheese mix
Preheat oven 375°F. Bring a large pot of water to a boil over high heat to cook the egg noodles. Once boiling, add some salt and the noodles and cook until al dente according to package directions. Drain thoroughly. While the water is coming up to a boil for the egg noodles, preheat a large skillet over medium-high heat and drizzle the pan with two turns of the pan with EVOO, about 2 tablespoons. Add the chicken pieces and brown on both side for about 4-5 minutes and remove to a plate.
To the same large skillet over medium-high heat, add the carrots, onions, celery, garlic and bay leaf, season with some salt and pepper and cook, stirring every now and then for 3-4 minutes, until the veggies start to get tender. Scoot the veggies to the sides of the skillet and add the butter to the center of the skillet. Once the butter melts, add the flour, stir to combine and cook about 1 minute. Add the white wine, chicken stock and milk and whisk together. Stir in the veggies, bring up to a bubble and simmer for 3-4 minutes until thick. Remove the bay leaf and then add the peas, reserved chicken pieces, basil, parsley and drained noodles, and toss to combine.
Transfer everything to a baking dish. In a bowl, mix together the bread crumbs and shredded Italian 3 cheese mix, sprinkle over the casserole and transfer to the oven. Bake for 15 minutes, until the top is brown. Serve with a simple green salad alongside.
Grilled Cheese with Pulled Short Ribs
Serves 8
2 tablespoons, plus 1 teaspoon grapeseed or canola oil
2 pounds boneless beef short ribs
Coarse salt and freshly ground pepper
1/2 carrot, chopped
1/2 rib of celery, chopped
1/2 onion, chopped
6 medium cloves garlic, crushed
1 cup red wine, such as Cabernet Sauvignon
Sachet (recipe follows)
3 cups homemade or store-bought low-sodium canned beef broth
One 2-pound loaf sourdough bread, cut into 16 slices
12 ounces fontina or Bel Paese cheese, thinly sliced
2 tablespoons plus 2 teaspoons Pickled Red Onions (recipe follows)
4 teaspoons unsalted butter, room temperature
Preheat oven to 325 degrees. Heat 1 tablespoon oil in a large ovenproof saucepan with a lid over medium-high heat. Season short ribs with salt and pepper and add to pan. Sear ribs on both sides until caramelized, about 5 minutes. Remove ribs from pan; set aside. Add carrot and celery to pan and cook 5 minutes. Add onion and garlic and cook, stirring, until caramelized, about 5 minutes more. Return short ribs to the pan and add wine and sachet.
Cook until the wine is almost evaporated, stirring occasionally, about 6 minutes. Add the beef broth and bring the mixture to a boil. Cover and transfer saucepan to oven; cook, stirring occasionally, for 2 hours. Uncover and continue cooking the short ribs for 1 hour, basting ribs every 15 minutes with the cooking liquid. Cook 1 hour more, for a total of 4 hours cooking time. Remove short ribs from oven and let cool in their liquid, 30 minutes. Transfer ribs to a plate, and with two forks, slightly shred following the natural grain of the meat; set aside.
Raise oven temperature to 350 degrees. Top 8 slices of bread with about 1 1/2 ounces of cheese each. Add 1 teaspoon of pickled onion. Top with 1/4 cup pulled short ribs and a second layer of cheese. Top with remaining slices of bread to form 8 sandwiches. Brush both sides of each sandwich with 1/2 teaspoon butter.
In a cast-iron skillet, heat 1 teaspoon oil over medium-high heat. Working in batches, add sandwiches to skillet, and immediately turn so that all the oil is absorbed. Weight down sandwiches with a small ovenproof skillet; cook for 1 minute. Turn sandwiches, return weight, and transfer to oven. Cook 2 minutes, remove weight, turn sandwich, and continue cooking 1 minute. Remove from oven, and slice sandwich on the diagonal. Repeat process with remaining sandwiches.

Makes 1
4 sprigs fresh flat-leaf parsley
6 sprigs fresh thyme
2 fresh bay leaves
1 teaspoon black peppercorns
One 5-inch piece dark green leek top, washed
Wrap all ingredients in a small piece of cheesecloth. Tie to enclose with kitchen twine.
Pickled Red Onions
Makes 5 cups
2 tablespoons coriander seeds
1 tablespoon mustard seeds
3 medium red onions, cut in half lengthwise and thinly sliced
1/4 cup red-wine vinegar
1/4 cup white balsamic vinegar
1/8 cup sugar
3 fresh bay leaves
3 sprigs fresh thyme
Coarse salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
Toast the coriander seeds in a small, dry skillet over medium heat until fragrant, about 2 minutes. Add mustard seeds, and toast 1 minute more; set aside. Soak onions in a large bowl of ice water, about 10 minutes. Drain, pat dry, and transfer to a medium heatproof bowl.
Place vinegars, sugar, bay leaves, and thyme in a small saucepan and slowly bring to a boil over medium heat; add reserved coriander and mustard seeds. If mixture seems too acidic, add a little water. Pour mixture over onions and let stand 5 minutes. Drain, discarding liquid, and season onions with salt and pepper. Toss onions with olive oil and store, refrigerated, in an airtight container until ready to use, 2 to 3 weeks.
